The original Exolios discipline. Still our most operationally honest practice.
Fifteen years of hands-on F&B operations, hospitality management, process consulting, and cost optimization for hotels, restaurant chains, cloud kitchens, and global hospitality operators. The practice the company was founded on — and the one that still teaches every other discipline how to think.
Exolios began life in 2011 as Culinary Inc — a hospitality solutioning firm built on three uncompromising operating principles: precision, operational excellence, and people-first thinking. For nearly a decade, our entire institutional muscle memory was built running F&B operations for hotels, restaurant groups, and global hospitality brands. Pre-opening setups, kitchen workflows, menu engineering, beverage P&Ls, vendor consolidation, BOH-FOH discipline, brand-standard audits — the unglamorous, deeply operational work that decides whether a restaurant survives its second year.
When Exolios pivoted post-COVID into IT staffing, GCC, and AI workforce solutions, we didn't shut the F&B practice down. We doubled it down. The discipline that taught us how to engineer a 60-cover kitchen workflow is the same discipline behind how we run a 60-person engineering pod. Our F&B consulting practice today serves hospitality operators across India, the Middle East, and the global markets — with a heritage that goes back to the very first invoice the company ever issued.

Years of operational F&B and hospitality experience
Hands-on engagements across hotels, restaurant chains, cloud kitchens, hospitality groups, and concept-stage operators — from operational audits to full pre-opening builds.
THE FOUR PILLARS
Four disciplines, applied in every hospitality engagement.
F&B and hospitality consulting at Exolios is organized around four operational pillars. Most engagements touch two or three; the larger ones touch all four.
F&B Operations
The heartbeat discipline. Kitchen workflow design, menu engineering, BOH/FOH operating models, beverage program design, service standards, recipe and portion control, food safety governance, vendor and supply-chain consolidation, and the daily operational rhythm that determines whether a kitchen runs profitably.
Property-level management consulting for hotels and hospitality operators. Front-office discipline, housekeeping standards, revenue management practices, F&B-as-a-business-unit modeling, guest journey design, brand-standard alignment, and the cross-departmental governance that separates well-run properties from struggling ones.

Process Consulting
The documentation and discipline layer. Standard Operating Procedures, training curriculums, quality audit programs, brand-standard rollout playbooks, multi-unit standardization, mystery-audit frameworks, and the operating-rhythm cadence that keeps a multi-property group consistent — from the flagship to the franchise.

Cost Optimization
The P&L surgery. COGS reduction, beverage cost rationalization, labor scheduling, energy and utilities efficiency, vendor consolidation, contract renegotiation, waste reduction programs, and the pricing-and-margin discipline that determines whether the unit-level economics hold up at scale.
Independent concept owners launching first or second properties — the operating discipline behind a creative culinary vision.
Operational Audits
Diagnostic engagements for properties or chains seeking objective, third-party operational assessment.
Restructure & Re-launch
Underperforming properties, operational turnarounds, brand re-launches, and concept refreshes.
ENGAGEMENT FORMATS
Six engagement formats, tuned to the question being asked.
An owner asking "is my BOH efficient?" needs a different engagement shape than one asking "what should my chain look like in three years?". We meet the question on its own terms.
01
Operational Audit
Diagnostic engagement. End-to-end operational assessment, P&L review, vendor scan, BOH/FOH walkthrough — delivered as a structured findings report with a prioritized action register.
3 – 6 weeks
02
Pre-Opening Setup
Concept-to-Day-1 build. Operating model, recipe library, SOP set, hiring plan, supplier onboarding, training rollout — through soft launch and into the first 90 days.
12 – 24 weeks
03
Concept Development
Brand and concept design from a blank canvas. Cuisine direction, menu architecture, service philosophy, design language, customer-experience model — closely aligned with the operator's investment thesis.
6 – 12 weeks
04
Cost Rationalization
Targeted cost-out program. COGS, labor, beverage, energy, and vendor renegotiation — with a model showing margin uplift against documented baseline. Outcomes-priced where possible.
4 – 10 weeks
05
Multi-Unit Standardization
For chains scaling 5 → 25 → 50+ units. Brand-standard playbook, multi-unit SOP harmonization, training rollouts, mystery-audit programs, and the central-vs-unit decision rights map.
3 – 9 months
06
Restructure & Turnaround
Underperforming properties or struggling concepts. Operational reset, P&L surgery, leadership-team rework, brand re-launch — with a defined performance milestone written into the engagement.
3 – 12 months

WHO THIS IS FOR
Operators with skin in the game.
Our F&B and hospitality consulting practice works best with operators who actually carry the P&L — owners, group GMs, multi-unit operators, and concept founders. We're particularly well-suited to:
Independent and group-owned hotels seeking operational lift
Restaurant chains scaling from single-digit to multi-unit footprints
Pre-opening properties — from concept to soft-launch
Cloud and ghost kitchen operators rationalizing economics
Multi-brand hospitality groups standardizing across portfolio
Investors and family offices conducting operational due-diligence
Underperforming operators looking for an honest turnaround partner
Bring us the property. We'll bring you the operating model.
A 30-minute scoping call, a structured walkthrough of your current operating state, and a clear engagement proposal. The same operational candor that built Exolios in 2011 — still on offer in 2026.
